In a small bowl place half of the warm water and 1 tsp of sugar.
Sprinkle the yeast on top. It will be foamy in about 5 minutes.
To the bowl of the stand mixer, (or a large bowl by hand), add the rest of the water, salt, and half of the flour. Mix to combine.
Add the yeast mixture back in to the bowl, along with the rest of the flour, and mix to combine.
Knead for 5 minutes with your stand mixer. (If by hand, tip out onto the counter and knead about 8 minutes.)
Cover and let rise until doubled, about 1 hour.
Tip the dough out onto the counter and separate into 12 equal pieces.
Roll each piece into a long rope, about 16 inches long (40 cm).
Shape into a pretzel and place onto a lined, or floured, cookie sheet.
Cover and let rise 30 minutes, or until almost doubled.
Bring a large pot of water to a boil. Add in the baking soda and 3 tsp sugar.
In batches, boil the pretzels for 30 seconds per side.
Remove to a lined baking sheet.
Preheat oven to 425 ℉ (220 ℃)
In a small bowl, add 1 egg and beat with a drizzle of water. Brush onto the tops of the pretzels.
Sprinkle the tops of the pretzels with coarse salt, to taste.
Bake for 15 minutes, or until browned.
