Homemade Theme Park Pretzels

Simple recipe for soft and chewy, theme park quality, homemade pretzels.

Ingredients
  

The dough

  • 1 ½ cups warm water
  • 1 tsp sugar
  • 2 ¼ teaspoons dry-active yeast
  • 1 tsp salt
  • 3½ - 4 cups all-purpose flour

  • 3 Tablespoons baking soda
  • 3 teaspoons sugar
  • Coarse salt to taste
  • 1 egg

Instructions
 

  • In a small bowl place half of the warm water and 1 tsp of sugar.
  • Sprinkle the yeast on top. It will be foamy in about 5 minutes.
  • To the bowl of the stand mixer, (or a large bowl by hand), add the rest of the water, salt, and half of the flour. Mix to combine.
  • Add the yeast mixture back in to the bowl, along with the rest of the flour, and mix to combine.
  • Knead for 5 minutes with your stand mixer. (If by hand, tip out onto the counter and knead about 8 minutes.)
  • Cover and let rise until doubled, about 1 hour.
  • Tip the dough out onto the counter and separate into 12 equal pieces.
  • Roll each piece into a long rope, about 16 inches long (40 cm).
  • Shape into a pretzel and place onto a lined, or floured, cookie sheet.
  • Cover and let rise 30 minutes, or until almost doubled.
  • Bring a large pot of water to a boil. Add in the baking soda and 3 tsp sugar.
  • In batches, boil the pretzels for 30 seconds per side.
  • Remove to a lined baking sheet.
  • Preheat oven to 425 ℉ (220 ℃)
  • In a small bowl, add 1 egg and beat with a drizzle of water. Brush onto the tops of the pretzels.
  • Sprinkle the tops of the pretzels with coarse salt, to taste.
  • Bake for 15 minutes, or until browned.
