Spooky Pumpkin Streusel Muffins

Fall pumpkin flavours, are enhanced by warm cinnamon, and sweet streusel topping for a delightful crunch.

Equipment

  • 1 muffin tray

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • cup brown sugar
  • 1 egg
  • ¾ cup milk
  • ¾ cups pumpkin purée
  • cup butter melted

For the streusel

  • cup all-purpose flour
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon

Instructions
 

  • In a medium bowl mix together the flour, baking powder, salt, and cinnamon.
  • Add in the brown sugar and mix. Set aside.
  • In a large bowl beat together the milk, egg, pumpkin purée, and melted butter.
  • Add the wet ingredients to the dry ingredients and mix until just incorporated. Do not overmix.
  • Preheat oven to 400 ℉ (200 ℃).
  • Line a muffin tray.
  • Spoon generous spoonful's of batter into each muffin tray.

For the streusel

  • To a medium bowl. Mix the flour, brown sugar, and cinnamon.
  • Pour over the melted butter and mix to a course crumb.
  • Press the crumb gently into the tops of the muffin batter.
  • Bake for 15-20 mins, or until a toothpick inserted into the centre comes out clean.
  • Cool slightly, and serve with hot apple cider!
