Spooky Pumpkin Streusel Muffins

Fall pumpkin flavours, are enhanced by warm cinnamon, and sweet streusel topping for a delightful crunch.

- 1 ½ cups all-purpose flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ⅓ cup brown sugar
- 1 egg
- ¾ cup milk
- ¾ cups pumpkin purée
- ⅓ cup butter melted
For the streusel
- ⅓ cup all-purpose flour
- ¼ cup brown sugar
- ½ teaspoon cinnamon
In a medium bowl mix together the flour, baking powder, salt, and cinnamon.
Add in the brown sugar and mix. Set aside.
In a large bowl beat together the milk, egg, pumpkin purée, and melted butter.
Add the wet ingredients to the dry ingredients and mix until just incorporated. Do not overmix.
Preheat oven to 400 ℉ (200 ℃).
Line a muffin tray.
Spoon generous spoonful's of batter into each muffin tray.
For the streusel
To a medium bowl. Mix the flour, brown sugar, and cinnamon.
Pour over the melted butter and mix to a course crumb.
Press the crumb gently into the tops of the muffin batter.
Bake for 15-20 mins, or until a toothpick inserted into the centre comes out clean.
Cool slightly, and serve with hot apple cider!
