- ¾ cup softened butter 175 ml
- 1 cup brown sugar 200 g
- ½ cup white sugar 100 g
- 1 egg
- 2 teaspoons vanilla 10 ml
- ⅔ cup all-purpose flour 100 g
- 1 teaspoon baking powder 3 ml
- 1 teaspoon cinnamon 2.5 ml
- 3 cups quick oats 300 g
- 1 ½ cups jam or filling of choice 375 ml
Preheat oven to 350 ºF (180 ºC)
In a large bowl, cream together the butter and sugars.
Beat in the egg and vanilla until it is light and fluffy.
Sprinkle on top the baking powder and cinnamon.
Stir into the creamed mixture.
Blend in the oats and flour, just until you have a smooth dough.
Spoon 1-2 Tablespoons worth of dough onto a lined baking sheet.
Bake for 10-12 minutes or until the edges are golden and the centre is set.
Allow to cool to room temperature.
Spread the jam (or filling of choice) on the flat bottom of the cookies. Sandwich together.
