Ingredients
Potatoes – Use precooked, still warm potatoes.
Onion – Use onion, shallots, spring onions, or chives.
Bacon – I used thick cut bacon.
Vinegar – I used apple cider vinegar but regular white vinegar will also work.
Broth – Use beef broth for best flavour. Chicken broth or vegetable broth can also be used.
Celery seed – Flavour.
Sugar – I used white sugar.
Salt & pepper – Flavour.

How to make Hot German Potato Salad
- Wash and place 6 medium potatoes in a large pot of water. The water should cover the potatoes about 1 inch.
- Bring to a low boil over medium heat.
- Cook until just tender, about 15-20 mins depending on the size of the potatoes.
- Remove from the water and allow to cool slightly, until you can handle them.
- Meanwhile cook 1 pound of bacon, until crispy. Set aside.
- To a pan on medium heat, add 1 Tablespoon of the bacon grease.
- Finely dice 1/2 an onion (or onion substitution) and add this to the pan.
- Stir in 1/3 cup apple cider vinegar and 1/2 cup of beef broth.
- Add in 1/2 teaspoon celery seed, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 Tablespoon sugar.
- Stir and let it come to a simmer to soften the onions.
- Peel off the skin from the warm potatoes and remove any imperfections.
- Slice the potatoes and add them to a serving dish.


13. Cut the cooked bacon into bite-sized chunks and toss them with the potatoes.
14. Pour evenly over top the hot potato salad dressing.
15. Garnish with diced chives or parsley.
