Keto Cheese Sauce without flour or cornstarch || Gluten-Free and Keto Friendly!
By Rebecca St. Clair
This Easy keto cheese sauce is super rich, creamy, and silky smooth. Made from simple whole food ingredients this tangy cheese sauce is perfect for anything from veggies to meat.
There are a ton of cheese sauce recipes out there but most use a flour and butter base to thicken the sauce. This sauce is thick and creamy without any grain added in.
This sauce is super quick and easy to make and the rich dairy make this an ideal choice to make on a keto diet.
Our very favourite way to enjoy this tangy cheese sauce is with baked and salted broccoli!
How to store keto cheese sauce without flour or cornstarch
The best way to store this is in an airtight container in the refrigerator.
You can reheat the sauce in a sauce pan, on the stove top, on medium heat, stirring until heated through.
This sauce can also be reheated in the microwave. Reheat in 3 second intervals until heated through. Stir after each interval.
The keto cheese sauce can be stored in the refrigerator for up to 5 days.
Frozen
Keto cheese sauce can be frozen in an airtight container for up to 3 months. However, since this sauce is full of dairy the texture will be slightly altered as it is defrosted and reheated.
Can I substitute the yogurt?
Yes! The best substitution for thick Greek yogurt is sour cream. They have a similar taste and thickness. You could also substitute with buttermilk, but the sauce will not be as thick.
Can I use the prepackaged shredded cheese?
This type of cheese has cellulose or other anti-caking agents added in, which helps the cheese not clump back together in the package. However, this will affect the sauce and will leave you with a grainy texture that will not taste as cheesy. Nor will you have that smooth texture.
What type of cheese to use for keto cheese sauce
The best type of cheese is your family’s favourite cheese. As long as the cheese is a good melting cheese it should work in this recipe. For a more complex flavour try using a cheese blend. Some of my favourite options of cheese for cheese sauce are,
- Gruyère– This cheese is slightly sweet, nutty, and salty. Often used in cheese fondue and a great choice for cheese sauce.
- Cheddar– This is, perhaps, the most popular choice for cheese sauce and the one I used in this recipe. There are many varieties of this popular cheese; marble, mild, sharp, and aged cheddars, to name a few. All would be ideal choices. Most are often orange in colour, if you want your cheese sauce to have the same colour.
- Asiago– I would use this as part of a cheese blend. Asiago is a delicious hard cheese, similar to parmesan. It is frequently used in bread baking, usually melted on top.
- Mozzarella – This, very mild flavoured cheese, is perfect if you are wanting a very mild cheese flavour to your sauce. This cheese will also give you that stringy stretchy cheese texture.
- Gouda– This cheese’s sweet, light, buttery flavour is an excellent choice for cooking, as it melts well. Try smoked gouda for a more complex flavour.
- Provolone – This is a great semi-hard cheese. It has buttery, nutty flavours and can range from sharp to milky depending on the variety you choose.
