Retro Broccoli Casserole with Canned Soup

This broccoli casserole is full of flavour and cheesy goodness. The perfect warm and cozy side dish that is quick and easy to make.
Since this easy broccoli casserole is made with canned mushroom soup mix it is super flavourful and creamy. Top with a crunchy bread crumb crust for the perfect casserole topping.
This broccoli side dish will have everyone at the table eating their veggies first!
How to store broccoli casserole
This broccoli casserole stores extremely well and is a great meal prep or make ahead side dish.
Fridge
To store the broccoli casserole in the fridge,
- Allow the casserole to cool to room temperature
- Cover completely in plastic wrap or store in an airtight container
- Store in the fridge for up to 5 days
Frozen
This casserole is an ideal freezer friendly recipe. To store in the freezer,
- Allow the casserole to cool to room temperature
- Cover completely in plastic wrap or store in an airtight container
- Store in the freezer for up to 3 months
If you are making this casserole in advance to freeze for later, leave the bread crumb topping off. Sprinkle this topping on fresh when you are ready to reheat and bake the casserole.

Broccoli casserole is a great make ahead side dish that you can freeze for later. Or if you are having a big holiday feast, this is a great option to prepare a day or two in advance. Then all you need to do is bake the day of the meal.

Frozen broccoli is harvested and quickly frozen when it is at it’s peak. Frozen broccoli is often less expensive or more readily available all year long.
Whatever you choose to use for this casserole will cook the exact same way.
Crust alternatives for broccoli casserole
This broccoli casserole is perfect when paired with a crumbly crisp topping like bread crumbs. That being said their are other options that you may want to try.
Dried stuffing – Boxed stuffing is really just a box of dried cubed and seasoned bread. Crush the dried bread into crumbs and layer on top of the casserole for an extra flavourful crispy topping.
Homemade Bread – If you have bread at home that is past it’s prime, cut it into cubes and dry it out in a 200 °F (95 °C) oven for about 1 hour or until dried and crumbly. Crush the bread into crumbs and layer that on top of the casserole.
Packaged bread crumbs – By store bough prepackaged bread crumbs from the store for the quickest and easiest way to top this casserole dish.
Crackers – Try crushing crackers and using in place of bread crumbs. No drying required! Butter crackers like Ritz are a perfect choice for this casserole or pair with a cheesy cracker for even more flavour.
Crumbled chips – Crunched up plain flavoured chips on top. They stay crisp and give the casserole a great savoury flavour.
Cheese – A simple layer of shredded cheese to melt and crisp on top is a perfect topping for this recipe
Crispy chow mein noodles – Whole or broken up this is a great alternative to top this casserole.

How to make broccoli casserole with canned soup
Ingredients
2 500 g bags frozen broccoli (or fresh broccoli, washed and cut)
1 cup grated cheddar cheese 125 g
¼ cup mayonnaise 60 ml
1 can cream of mushroom soup
¼ cup milk 60 ml
1 egg
½ cup dried bread crumbs 125 ml
3 Tablespoons melted butter 45 ml
Method
- Cook the broccoli according to the package directions, or boil until tender.
- Drain the broccoli and place in a square casserole dish.
- In a bowl mix until smooth the soup, mayonnaise, milk, egg, and grated cheese.
4. Spoon this onto the broccoli and stir to coat.
5.If making this broccoli casserole the day before, cover and store in the fridge.
the day of the meal
- Preheat oven to 350 °F (180 °C)
- Combine the bread crumbs and butter.
- Sprinkle overtop of the broccoli casserole
4.Bake in the preheated oven for 35 minutes or until the top is golden and the vegetables are heated through
Easy Broccoli Casserole with soup mix
