Tips and tricks for the perfect homemade pizza dough
Room temperature dough – Cold dough is much harder to shape and form into a flat round pizza. If you have made the dough in advance and is stored in the fridge, make sure to pull it out 1 hour before using it.
Use your hands – No need to break out the rolling pin for this dough. Use your hands to gently stretch and form the dough.
Cold rise – While you can make this dough and bake your pizza in the same day, making this pizza dough in advance and letting it cold ferment in the fridge overnight improves the flavour and texture.
High temperatures – If you notice that store bought pizza always looks and tastes better, it’s probably because their oven is hotter than yours! Higher temperatures will lead to a better oven-spring. This makes a crust that is airy and full of bubbles. It will also make a crisper outside crust.
Type of flour – While all-purpose flour is perfect for this recipe, for a superior crust opt for a more protein rich bread flour.
Pizza Stone or steel – While not necessary to cook your pizza, using a pizza stone or pizza steel will help a home oven get that restaurant quality pizza crust. Preheat the baking stone or steel in the oven, they will soak up all of the heat energy. When you place the pizza on top of the red-hot stone it will quickly release the heat into the pizza dough. This makes for a crisper crust and better oven spring.

How to caramelized pineapple in the oven
Drain the liquid from 1 can of chunked pineapple or 1 can of pineapples rings cut into chunks.
Lay the pineapple out on a lined baking sheet and sprinkle the top with with 1 teaspoon of cinnamon and a pinch of salt.
Heat in a preheated 450 °F (230 °C) for 15 minutes. Stir the pineapple chunks and return to the oven for another 15 minutes.

Ingredients
Pizza dough – Use your favourite recipe, store bought, or use my easy fool proof recipe.
Ham – Sliced honey baked ham can be replaced with your favourite cured meat.
Tomato sauce – Use you favourite homemade sauce or store bought.
Pineapple chunks – These are caramelized with cinnamon for a mellow sweet flavour
Cinnamon – Provides a warm, spiced soft sweetness.
Mozzarella cheese – A mild, stringy melting cheese, perfect for pizza.

How to make Homemade Hawaiian Pizza
To prepare the pineapple
- Prepare your favourite pizza dough or use store bought.
- Preheat oven to 425 °F (230 °C). Convection or fan on, if possible.
- If using, place a pizza stone or steel in the oven to preheat.
- Drain 1 can of pineapple chunks and place on a lined baking sheet.
- Sprinkle the top of the pineapple with 1 teaspoon of cinnamon and a pinch of salt.
- Bake in the preheated oven for 15 minutes.
- Remove and stir the pineapple. Return to the oven for another 15 minutes.
- Remove and set aside.
*Alternatively, you can fry the pineapple chunks on medium heat until the outside starts to colour.


To make the pizza
- Increase the oven to 475 °F (245 °C).
- Prepare all of your pizza toppings, grated cheese, sauce, ham, pineapple.
- Shape the dough with your hands into a rustic circle and top the pizza.


4. Grease the top of the pizza stone or steel with a little bit of oil.
5. Using a floured pizza peel, move the pizza to the stone or steel. (*Alternatively, you can use an inverted, floured cookie sheet to move the topped pizza)
6. Bake for 9 – 12 minutes or until the top is golden brown
7. Remove from the oven, slice, and serve.
Note: If you do not have a pizza stone, you can make the pizza on a greased baking sheet.


Homemade Hawaiian Pizza with Caramelized Pineapple

- 1 can pineapple chunks 398 ml
- 1 teaspoon cinnamon 5 g
- 1 pinch salt 1 g
- 2 pizza crust (1 recipe for pizza crust)
- 1 1/2 cups pizza sauce 398 ml
- 3 cups grated mozzarella cheese 335 g
- 1 cup honey baked ham sliced 150 g
Instructions
- Prepare your favourite pizza dough or use store bought.
- Preheat oven to 425 °F (230 °C).
- If using place a pizza stone or steel in the oven to preheat.
- Drain 1 can of pineapple chunks and place on a lined baking sheet.
- Sprinkle the top of the pineapple with 1 teaspoon of cinnamon and a pinch of salt.
- Bake in the preheated oven for 15 minutes.
- Remove and stir the pineapple. Return to the oven for another 15 minutes.
- Remove and set aside.
