Easy Wholesome Oatmeal Pancakes

These oatmeal pancakes are light, soft, and fluffy. They make the perfect hearty stack to top with fruit and drizzle with maple syrup.

Are oatmeal pancakes healthy

These pancakes are packed with a ton on nutritious oatmeal and are made with no added sugar!

Oats are incredibly nutritious and are a great source of fibre and protein! They are full of vitamins, minerals, and antioxidants

Oats are also rich in beta-glucan, which is a soluble fibre. This has been found to reduce blood glucose and increase the good bacteria in your gut. They have also been shown to lower cholesterol levels.

What type of oats to use for oatmeal pancakes

There are quite a few different types of oats when you visit the cereal section of the grocery store. Which ones are best for pancakes?

For these fluffy pancakes, quick-cook oats are the best choice. Since the oats need very little time to cook and soften.

Quick Oats

Quick-cook oats are like rolled oats or old-fashioned oats, because they are all rolled flat and thin. This shortens their cook time. However, quick-cook oats go through even more processing. They are partially steamed and rolled even thinner. This allows them to cook in only a few minutes.

Old-Fashioned

Rolled oats or old-fashioned oats would also be a great option for pancakes. The oats will hold their shape more than quick-cook oats and will have a heartier texture.

Steal-Cut

Steal-cut oats, Scottish oats, and oat groats would not be recommended to make fluffy oatmeal pancakes, as they have a much longer cook time and need more liquid-to-oat ratio when cooking these types of oats.

What makes these oatmeal pancakes fluffy?

There are a few different ways to get that light and fluffy restaurant quality pancake. For this recipe we are making them fluffy mechanically, that means whipping the egg whites until they hold a stiff foamy peak and then folding this into the batter.

By using chemical leaveners. For this recipe I am using baking powder to create the light and airy lift inside each pancake.

Since the chemical reaction happens as soon as the baking powder gets mixed into the liquid, you will need to work quickly so that the pancakes will not loose the air and lift caused by the baking powder.

Storage

Make a big batch of oatmeal pancakes and have them ready for breakfast any day of the week! With the proper storage you can have fresh pancakes without any extra time in the morning!

In the fridge

To store the pancakes in the fridge,

  • Allow the pancakes to cool to room temperature.
  • Place them on a plate, covered in plastic wrap or store them in an airtight container.
  • Store in the fridge for up to 3 day.

Can you freeze oatmeal pancakes?

Oatmeal pancakes freeze extremely well. This is the best option for longterm storage. To freeze these oatmeal pancakes,

  • Allow the pancakes to cool to room temperature.
  • Place the pancakes, in a single layer, on a baking sheet.
  • Freeze for 1 hour. (This will prevent the pancakes from squishing and freezing together)
  • Place the partially frozen pancakes in a freezer bag or airtight container.
  • Freeze for up to 3 months.
  • When you are ready to enjoy your pancakes, you can remove one and pop it straight into the toaster!

What can I add to oatmeal pancakes?

You can make these wholesome oatmeal pancakes even more nutritious by adding things like applesauce, mashed bananas, or protein powder.

Adding 1/2 cup of applesauce, 1 mashed banana, or a scoop of protein powder will not change the over all outcome of the recipe, so no need for any adjustments.

How to make oatmeal pancakes

Ingredients

1 cup quick oats 100 g

1 cup hot water 250 ml

2 eggs (separated)

½ cup milk 125 ml

2 Tablespoons oil 30 ml

2 teaspoons baking powder 10 ml

1 teaspoon salt 5 ml

½ cup all-purpose flour 75 g

(optional) ½ cup mix-ins of choice

Method

  1. In a small bowl soften the oats in the very hot water, for about 5 minutes.
  2. Separate the eggs. Beat the egg whites until they hold a stiff peak. Set aside.
  3. In a medium bowl, lightly beat the egg yolks, milk, and oil.
  4. Stir in the softened oatmeal mixture.
  5. Sprinkle evenly over top, baking powder, salt, and flour.
  6. Stir into the mixture.
  7. Add in the foamy egg whites and gently fold into the mixture. Keep as many foamy bubbles as possible. (The mixture doesn’t have to be completely uniform.)

8. Pour little round scoops of batter onto a greased griddle or frying pans preheated to medium-low.

9. (Optional) Add any mix-ins to the top of the batter.

10. Fry for about 2 minutes or until the sides are starting to set and bubbles are breaking on the surface of the batter.

11. Flip and cook another minute or until golden.
