  • Let the waffles cool to room temperature.

Overnight fermentation Sourdough Cheese Waffles

  1. Mix the dry ingredients omitting the baking powder and the baking soda.
  2. Add in the wet ingredients and mix until you have a smooth batter.
  3. Cover and store in the fridge overnight.
  4. In the morning just before cooking the batter, sprinkle evenly over top of the batter the baking powder and the baking soda.
  5. Mix this into the batter and allow it to sit about 5 minutes for the leaveners to form bubbles in the batter.
  6. The batter can be used cold from the fridge to make your waffles.

Salt – Flavour.
Baking powder – For the light and fluffy texture.
Baking soda – Light and fluffy texture.
Milk – The liquid to bring the ingredients together.
Sourdough starter – You can use bubbly starter or sourdough discard.
Sugar – Can be replaced with your favourite sugar alternative.
Eggs – Can be replaced by 1/4 cup of applesauce or yogurt.
Butter – Melted and mixed into the batter. Also used to stop the batter from sticking to the waffle iron. Can be replaced by the same amount of oil.

How to make Savoury Sourdough Cheese Waffles

  1. Preheat your waffle iron.
  2. In a large bowl whisk together 2 cups flour, 3 teaspoons baking powder, 1 Tablespoon sugar, and 1 teaspoon salt.
  3. Add in 1 cup of shredded cheddar cheese and toss to coat in the dry ingredients.

4. Gently mix in 1 1/2 cups milk, 2 eggs, 1 cup sourdough starter, and 1/4 cup melted butter.

5. Mix until the batter just comes together. A few lumps and bumps is fine.

6. Brush the inside of the waffle iron with a little bit of melted butter or oil.

7. In batches, cook the batter in the hot waffle iron until golden on both sides.

8. Remove and serve warm with your favourite toppings.

  • 1 teaspoon baking soda 5 g
  • 2 teaspoons baking powder 10 g
  • 1 teaspoon salt 5 g
  • 2 cup shredded cheddar cheese 250 g
  • 1 Tablespoon sugar 15 g
  • 1 1/2 cups milk 375 ml
  • 2 eggs
  • 1 cup starter (discard or active) 250 ml
  • 1/4 cup butter, melted 60 ml

Instructions

  1. Preheat your waffle iron.
