Marg’s Simple Oven Sautéed Carrots with Cheese
Marg’s Simple Oven sautéed carrots with cheese, is from a recipe collection from one of my grandmother’s aunts. A simple and delicious side dish, for any weekday dinner. The naturally sweet flavour is brought out by oven roasting the carrots. The sharp taste of the cheese is a perfect way to balance the sweetness. These are my son’s favourite carrot side dish recipe!

Why I like Oven roasting
So often I am searching for a healthy vegetable that my children are actually going to enjoy, without adding too many other ingredients to it. I find that oven roasting is the best way to cook most vegetables. They keep their texture so much better than steaming or boiling. Plus, I find that oven roasting gives them a little added sweetness!
Ingredients
3-4 large carrots
¼ cup butter
¼ cup parmesan cheese, grated
Salt and pepper to taste
Method
- Preheat oven to 350 °F (176 °C).
- In a pan, that can go in the oven, melt butter. I usually use a cookie sheet and pop it in the preheated oven for a minute of so to melt the butter.
- Peel and chop carrots into sticks or disks, whatever you prefer.
- Add to the pan and toss in the butter to coat.
- Sprinkle with salt and pepper, to taste.
- Bake for 30 mins. Remove from the oven, stir the carrots and add the cheese.
- Return to the oven for about 5 mins or until fork tender and the cheese is melted.
- Serve warm

Alternatives for Oven Sautéed Carrots
I love substituting the salt and pepper for garlic salt. I find, garlic works well for most vegetables. You could also use a few cloves of garlic and roast them in the oven along with the carrots. I often keep compound butter, specifically garlic, in the freezer. This would be a great substitute for the plain butter in this recipe!
I used Dubliner cheese this time for my carrots, in place of parmesan, and they turned out great. I think any hard cheese should work as well.
Another great substitution is adding a little bit of honey, or even maple syrup, when they are done cooking. Toss the carrots to coat everything well. In this case I would omit the cheese.
