The cobbler topping is made with a simple drop biscuit recipe. You can swap out the all-purpose flour in this recipe whole wheat flour or substitute half of the flour with cornmeal for a heartier topping.

Sugar

If you are looking to replace white sugar you can substitute the sugar in this recipe with your favourite sugar substitute. But since all substitutes don’t have the same level of sweetness, use this guide to help you with the conversion.

Ingredients

Strawberries – Use fresh or frozen berries.
Sugar – I used white sugar to sweeten the berry filling and the cobbler topping.
Flour – I used all-purpose flour for this recipe.
Lemon juice – To compliment and brighten the berry filling.
Baking powder – To rise the cobbler topping.
Egg – For light and tender cobbler topping.
Milk – To bring the drop biscuits together.
Butter – For buttery and rich drop biscuits.


How to Make an Easy Strawberry Cobbler

  1. In a large pot or Dutch oven on medium-low heat, add in 5 cups of hulled and sliced fresh or frozen strawberries.
  2. Mix in 1 cup of sugar and 1/4 cup all-purpose flour.
  3. Stir occasionally, until the mixture comes to a simmer. Allow the fruit to soften and the juices start to thicken.
  4. Remove from the heat and stir in 1 teaspoon of lemon juice.

Cobbler topping

  1. Preheat the oven to 375 °F (190 °C).
  2. In a large bowl add in 1 1/4 cups of all-purpose flour, 2 Tablespoons sugar, 1/4 teaspoon salt, and 1 Tablespoon baking powder.
  3. Whisk to combine.
  4. Add in 1 egg, 1/2 milk, and 1/3 cup melted butter.
  5. Mix until the batter just comes together.
  6. If you made the fruit filling in an oven proof pan you can drop the cobbler topping in little biscuits all over the top. If no, transfer the fruit filling into a casserole dish and spoon little dollops of the cobbler topping all over the top. Do not mix it into the filling.
  7. Bake in a preheated oven for 30-35 mins.
  8. Remove it from the oven and allow it to cool for a few minutes for the filling to thicken.
  9. Serve hot or warm with whipped cream or vanilla ice cream on top.
