How to Freeze breakfast wraps

To freeze homemade breakfast wraps: cook and cool ingredients, assemble, wrap individually, store in freezer bags, and freeze for up to 2 months.

Step 1: Choose freezer-friendly ingredients

Milk – Mixed with the eggs for a light and fluffy texture.
Hot sauce – Can be omitted for a less spicy flavour.
Cheese – I used grated cheddar cheese.
Salt and Pepper – Flavour.

How to make Hearty Freezer Breakfast Wraps

  1. Preheat oven to 350 °F (180 °C).
  2. Wash and cut into small cubes, 3 medium potatoes.
  3. Par-boil the potatoes until tender, 8 to 10 minutes depending on the size.
  4. Drain and set aside.
  5. In a large oven proof skillet on medium heat, crumble and fry 1 pound of ground sausage.
  6. Once cooked through, remove to a plate and set aside.

7. Wash, cut, and remove the seeds from 1 bell pepper. Cut into a medium dice.

8. Add to the skillet and fry with the leftover oil from the sausage meat, until tender.

9. In a large bowl, whisk together 10 eggs.

10. Whisk in 1/4 cup of milk and season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper, or to taste.

11. Pour this mixture into the skillet with the peppers.

12. Mix in the cooked sausage and potatoes.

13. Place in the preheated oven and cook for 20-25 minutes or until cooked and set. (This will depend on the size of your pan. If your skillet is too small you can transfer the mixture to a greased rectangular casserole dish or a greased and lined baking sheet.)

14. Remove from the oven and allow to cool.

Assembling the wraps

  1. Cut the egg mixture into 10 equal rectangles.
  2. Grate 2 cups of cheddar cheese.
  3. Lay out 10 large flour tortillas.
  4. Place a rectangle of the egg mixture into the centre of each wrap.
  5. Place a small line of hot sauce on top of each.

6. Add a layer of grated cheese to the top.

7. Fold the sides of the wrap up to cover the filling.

8. Fold the bottom of the wrap up and fold it tightly over the filling. Continue to tightly wrap the tortilla up to secure the wrap.

9. Cover and secure each wrap completely in plastic wrap, parchment paper, or aluminum foil.

10. Place the covered wraps into a freezer bag and label.

11. Store in the freezer for up to 2 months.
