What oatmeal is best for Oatmeal Sandwich Cookies
For cookies, in general, quick-cook oats are the best choice. Since the oats need very little time to cook to make them soft.
~ Quick-cook oats
- Similar to rolled oats or old-fashioned oats.
- They are all rolled flat and thin. This shortens their cook time.
- Quick-cook oats go through even more processing.
- They are partially steamed and rolled even thinner.
- This allows them to cook in a matter of minutes.
~ Rolled oats or old-fashioned oats
- A great choice for baked cookies.
- These will result in a chewier cookies.
- Visually, the oats will be more pronounced.
~ Steal-cut oats, Scottish oats, and oat groats
- These types of oats are far less processed.
- They are not recommended to make oatmeal cookies.
- They need a much longer cook time.

Refrigerator
Yes, you can store oatmeal sandwich cookies in the fridge. The fridge will dry out cookies and baked goods, so it is best to eat them within 1 week for optimal freshness.
- Allow the cookies to cool to room temperature.
- Cover the cookies or store in an airtight container.
- Store in the fridge for up to 7 days.
Frozen
Oatmeal sandwich cookies freeze extremely well! You can freeze them either filled or unfilled.
To freeze your cookies
- Allow the cookies to cool to room temperature.
- Place the cookies on a tray and freeze them (either filled or unfilled) for an hour.
- Place the partially frozen cookies in a freezer bag or airtight container and freeze for up to 3 months.
- When you are ready to enjoy them, remove from the freezer and allow to defrost at room temperature.

My favourite filling for these sweet little oatmeal cookies is jam. I love the sweet punch of fruit contrasted with the hearty cookies.
Since oatmeal cookies have such a versatile flavour, they can be filled with a variety of different spreads, depending on what suits your family’s tastes.
~Fruit jam or jelly
- A bright burst of fruity flavour
- Doesn’t make the cookies soggy
- Stores well
~ Buttercream
- Perhaps the most common filling for cookies
- Easy to spread or pipe onto the cookies
- Wont make the cookies soggy
- Stores well
- Experiment adding different flavours such as vanilla, orange, or maple extract!
~To make a simple buttercream ~
1. Cream ½ cup softened butter with 4 cups of icing sugar and ¼ teaspoon of salt.
2. With the mixer on low add in 2-3 Tablespoons of cream, or enough to give you a spreadable consistency.
~ Nutella or chocolate ganache

~To make an easy spreadable chocolate ganache ~
1. Chop 120 g quality chocolate and place in a heat proof bowl.
2. Heat ½ cup of heavy cream in a sauce pan, until it starts to steam. Pour this into the bowl with the chocolate.
3. Allow to sit 2-3 minutes to melt the chocolate. Stir.
4. Allow it to cool and thicken about 30 minutes. Stir occasionally.

- Stores well
~ If you find that your nut butter is not thick enough, cream it with icing sugar until you have the desired thickness ~
Healthier Oatmeal Cookies
With some simple swap outs, you can make a healthier version of these oatmeal sandwich cookies.
Applesauce
This is a classic trick for making things a little more healthy!
- Swap out half of the butter in the original recipe with applesauce.
Flour
Exchange the all-purpose flour in this recipe for whole wheat flour or your flour of choice. Since the main bulk of these cookies is from the oats, the flour can be easily swapped out without much alteration to the cookies.
Sugar Substitutes
There are so many substitutions for sugar that you can get your hands on now. When choosing a sugar substitute make sure you check the ratio of the substitute compared to regular sugar. They are often not a 1:1 replacement.

How to make Oatmeal Sandwich Cookies
Ingredients
¾ cup softened butter 175 ml
1 cup brown sugar 200 g
½ cup white sugar 100 g
1 egg
2 teaspoons vanilla 10 ml
⅔ cup all-purpose flour 100 g
1 teaspoon baking powder 3 ml
1 teaspoon cinnamon 2.5 ml
3 cups quick oats 300 g
1 ½ cups jam or filling of choice 375 ml
Method
- Preheat oven to 350 ºF (180 ºC)
- In a large bowl, cream together the butter and sugars.
- Beat in the egg and vanilla until it is light and fluffy.
- Sprinkle on top, baking powder and cinnamon.
- Stir into the creamed mixture.
- Blend in the oats and flour, just until you have a smooth dough.
7. Spoon 1-2 Tablespoons worth of dough onto a lined baking sheet.
8. Bake for 10-12 minutes or until the edges are golden and the centre is set.
9. Allow to cool to room temperature.
10. Spread the jam (or filling of choice) on the flat bottom of the cookies. Sandwich together.
