Sandra’s Classic Bite-Sized Snickerdoodles

Sandra’s Classic Bite-Sized Snickerdoodles are a light and fluffy cookie with a sweet cinnamon sugar crunch! Perfect for an afternoon tea or afterschool snack! These little cuties are quick and easy to whip up!

This recipe originally came from a work friend of my grandmother’s. She would bring them in for teatime to share at the office. So, of course, my grandmother had to have the recipe!

Snickerdoodles fresh out of the oven on a cookie sheet.

Ingredients

1 cup butter 250mL

1 ½ cup white sugar 375mL

2 large eggs

3 ¾ cups all-purpose flour 875mL

1 teaspoon baking soda 5mL

2 teaspoons cream of tartar 10mL

½ teaspoon salt 2mL

Coating

2 tablespoons white sugar 25mL

2 teaspoons cinnamon 10mL

Method

  1. Preheat oven to 400 ºF (200 ºC).
  2. In a mixing bowl with hand beaters, or a stand mixer with a paddle attachment, cream together butter and sugar until light and fluffy.
  3. Add eggs and beat into mixture.
  4. Add the rest of the dry ingredients (not including the ingredients for the coating). Mix until just combined.
  5. Shape the dough into bite-sized balls.
  6. Mix the coating ingredients and roll the balls to coat.
  7. Place them on a lined baking sheet and flatten each with a fork.
  8. Bake in preheated oven for about 10 minutes.
