Room temperature

Substitutions for S’mores Brownies

Feel free to substitute some of the ingredients in this recipe to suit your taste.

A great option is the type of chocolate. Use anything from dark to white chocolate or cut up your favourite chocolate bars for a unique taste.

Another great way to customize this recipe is with the cookies. The graham cracker crust can be made with Oreo cookie crumbs. The Graham crackers on top can be replaced with your favourite cookie like Oreo Cookies, vanilla wafers, or even Teddy Grahams for a fun kid friendly treat.

Ingredients

Graham cracker crumbs – For the brownie base.
Butter – Melted butter holds together the base and adds richness to the brownies.
Brown sugar – For a soft caramel flavour.
Vanilla – Flavour.
Egg – Richness.
Cocoa – Rich chocolate flavour.
Flour – I used all-purpose flour for this recipe.
Baking powder – For lift and rise.
Salt – Flavour.
Milk – Creamy texture.
Chocolate chips – I used semi-sweet chocolate chips.
Mini marshmallows – Gooey S’mores topping.
Graham crackers – Broken whole Graham crackers for garnish.

How to make S’mores Brownies

  1. Preheat the oven to 350 °F (180 °C).
  2. Grease and line an 8 x 8 in. square pan with parchment paper.
  3. In a bowl, mix 1 cup of Graham cracker crumbs with 3 Tbsp of melted butter.
  4. Press this into the bottom of the lined pan.
  5. Bake in the preheated oven for 10 minutes.
  6. Meanwhile in a bowl, mix together 1/3 cup melted butter, 3/4 brown sugar.

7. Stir in 1/4 cup flour, 1/3 cup cocoa, 1/2 tsp baking powder, 1/8 tsp salt.

8. Mix in 1/4 cup milk, 1 tsp vanilla, and 1 lightly beaten egg.

9. Pour this on top of the baked crust.

10. Bake for another 20 minutes.

11. Remove from the oven and immediately top with 1 small bag of mini marshmallows.

12. Return to the oven to allow the marshmallows to soften and puff up. About 5 minutes.

13. Remove from the oven. Immediately sprinkle on 1/2 cup chocolate chips and poke the pieces of 4 broken graham crackers through the marshmallow topping. This will hold them in place as they cool.

14. Allow the brownies to cool before slicing and serving. (To stop the marshmallows from sticking to the knife as you cut them, brush the blade lightly with oil.)

  • 3 Tablespoons melted butter 45 g
  • 1/3 cup butter, melted 75 g
  • 3/4 cup brown sugar 150 g
  • 1/3 cup cocoa powder 40 g
  • 1/4 cup all-purpose flour 37 g
  • 1/2 teaspoon baking powder 2 g
  • 1/8 teaspoon salt 1 g
  • 1 egg
  • 1 teaspoon vanilla 5 ml
  • 1 small bag mini marshmallows 250 g
  • 1 cup semi-sweet chocolate chips 175 g
  • 4 graham crackers

Instructions

  1. Preheat the oven to 350 °C (180 °C).
