- Beat in 1 egg, until soft and fluffy. Scrape down the bottom and sides of the bowl to ensure all the ingredients are getting mix in evenly.

7. Mix in 1 cup of milk.
8. Fold in 1 1/2 cups of cleaned gooseberries. (You can toss them in a little flour if you are worried about them sinking while the muffins bake.
