  1. In a bowl, mix together 1 cup all-purpose flour, 1/4 cup brown sugar, 2 Tablespoons white sugar, 1 teaspoon cinnamon, 1/8 teaspoon salt.
  2. Crumble in with your fingertips, 1/3 cup of softened butter. Set aside.

  1. Preheat oven to 375 °F (190 °C).
  2. In a bowl whisk together 2 cups all-purpose flour, 1 Tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon.
  3. Cream together 1/3 cup softened butter, 3/4 cup white sugar, 3/4 cup brown sugar.
  4. Beat in 2 eggs, one at a time until light and fluffy. Scrape down the bottom and side of the bowl after each addition.

5. Mix in 1 cup of buttermilk.

6. Mix in the dry ingredients.

7. Fold in 1 1/2 cups gooseberries.

8. Layer half of the batter into a greased and lined 9 X 9-inch pan.

9. Sprinkle over top, half of the streusel topping.

10. Spoon the rest of the batter on top and gently smooth it out without mixing in the streusel layer.

11. Sprinkle the rest of the streusel topping on the batter.

12. Bake in the preheated oven for 50 -60 minutes or until a toothpick inserted into the centre comes out clean.

13. Allow to cool 10-20 minutes before slicing and serving.
