  4. In a bowl cream together 1/4 cup of softened butter with 1/2 cup of brown sugar.
  5. Beat in 1 egg, until soft and fluffy. Scrape down the bottom and sides of the bowl to ensure all the ingredients are getting mix in evenly.

6. Stir in the dry ingredients, until just combined.

7. Mix in 1 cup of milk.

8. Fold in 1 1/2 cups of cleaned gooseberries. (You can toss them in a little flour if you are worried about them sinking while the muffins bake.

9. Fill the prepared muffin cups about 3/4 full.

10. Bake in the preheated oven 20-25 minutes or until lightly golden on top and a toothpick inserted into the centre comes out clean.
