Brown sugar – Creamed with butter for the base of the cake batter.
Eggs – The eggs in this recipe can be replaced by 1 mashed banana or applesauce.

How to make caramel apple loaf cake

  1. Preheat oven to 350 °F (180 °C).
  2. In a large bowl, cream together 1/2 cup soft butter and 1 1/4 cups brown sugar.
  3. Add in 2 eggs, one at a time, and beat well after each addition.
  4. Mix in 1/2 teaspoon salt, 2 teaspoons baking powder, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg.
  5. Mix in 2 cups all-purpose flour and 3 peeled, cored, and chopped apples.

6. Layer the batter into a greased and lined loaf pan.

7. Bake for 70 to 75 minutes or until a toothpick inserted into the centre comes out clean.

Caramel Icing

  1. In a sauce pot over medium heat melt together 1/4 cup butter, 1/2 cup brown sugar, 1 Tablespoon 35% cream, and 1/4 teaspoon salt.
  2. Bring to a boil.
  3. Stirring constantly, continue to boil for 1 minute.
  4. Removing from heat. Add in 1 teaspoon vanilla extract, (it will bubble up a bit).

5. Stir in 1 cup icing sugar until a smooth thick icing.

6. Immediately spread on the warm cake it will start to set immediately.
