Fridge
- Allow the casserole cool to room temperature.
- Transfer to an airtight container or cover completely in plastic wrap
- Store in the fridge for up to 4 days.
Freezer
- Allow the casserole to cool to room temperature.
- Transfer to a freezer safe container.
- Wrap completely in plastic wrap.
- Freeze for up to 3 months.
To reheat:
- Thaw overnight in the fridge.
- Reheat with added broth or milk to restore creaminess, if needed.

Ingredients
Broth – I used chicken broth for this recipe but vegetable or beef broth are also great options. The sodium level of the broth will impact how much salt is needed to add later on.
Cream cheese – For rich, tangy, and creamy rice.
Garlic powder – Flavour.
Rice – Use your favourite rice for this recipe.
Broccoli – I used a bag of frozen broccoli for quick and easy prep work.
Salt and pepper – Flavour.
Chicken – I used chicken breast for this recipe. But chicken thighs will also work.
Paprika – For a bright pop of colour and flavour.

How to make Easy Chicken and Rice Casserole Without Condensed Soup
- Preheat oven to 375 °F (190 °C).
- In a large Dutch oven or oven proof pot over medium heat, whisk together 4 cups of broth and an 8 oz brick of softened cream cheese.
- Stir to break up the cheese and melt into the broth.
- Remove from the heat and stir in 1 1/2 cups of rice, 1 teaspoon garlic powder, 1/2 teaspoon salt (depending on the sodium level of the broth), and 1/4 teaspoon of pepper.
- Add in a 500 g bag of frozen broccoli.


6. Layer on top 5-6 chicken breast.
7. Bake covered in the preheated oven 50 minutes.
8. Remove the lid and sprinkle evenly on top 1/2 teaspoon of paprika.


9. Return to the oven and bake another 10 minutes or until the chicken is cooked through and the rice is tender.
10. Remove from the oven and allow to cool and set 10 minutes before serving.
