How to store a Freezer Lasagna

  • Assemble the lasagna in a freezer and oven safe pan. Foil pans work great especially if you are gifting this freezer meal.
  • Wrap completely in plastic wrap pressed directly on the surface.
  • Wrap again in aluminum foil.

Ingredients

Ground beef – I used lean ground beef.
Sausage – I used ground sausage meat not sausage in casings.
Garlic – I used fresh but this can be replaced with garlic powder.
Canned tomato – Use crushed, diced, or stewed tomatoes.
Tomato sauce – Use your favourite tomato sauce.
Tomato paste – To thicken the sauce and add a rich tomato flavour.
Ricotta cheese – For the thick cheese layer in the middle.
Egg – To bind the cheese layer together.
Nutmeg – Flavour.
Pasta – Use oven-ready lasagna noodles.
Cheese – Mozzarella cheese to top the casserole.
Salt and pepper – Flavour.

How to make a freezer lasagna

  1. Preheat a large pot or Dutch oven to medium heat.
  2. Add 1 pound of ground beef and 1 pound of ground sausage. Break up and crumble the meat.
  3. Cook until there is no pink left.
  4. Add in 2 cloves of minced garlic and fry along with the ground meat.
  5. Stir in 1 large can of crushed tomatoes, 1 can of tomato sauce, and 1 can of tomato paste.
  6. Reduce the heat to a simmer. Cook stirring occasionally for 15 minutes.

7. Meanwhile in a large bowl, mix together two 475 g containers of ricotta cheese with 1 egg and 1/2 teaspoon of nutmeg.

Assembly

  1. In a large rectangular, freezer-safe, and oven safe pan, spread a thin layer of the sauce. This will prevent the pasta from sticking to the bottom of the dish.
  2. On top place a layer of oven-ready lasagna noodles. Make sure to leave a little space between each as they will expand as they cook in the oven.
  3. Layer evenly on top of the pasta 1/2 of the meat sauce.
  4. Place another layer of pasta.

5. Evenly layer on top the ricotta cheese mixture.

6. Place another layer of pasta.

7. Layer on top the rest of the meat sauce.

8. If freezing omit the top mozzarella cheese layer.

To freeze

  1. Allow the meat sauce in the lasagna to cool.
  2. Wrap completely in plastic wrap pressed directly on the surface.
  3. Wrap again in aluminum foil.
  4. Label with date and baking instructions.
  5. Store in the freezer for up to 3 months, for best quality.

Bake from frozen

  1. Remove the plastic wrap and foil.
  2. Add on top 2 cups of grated mozzarella cheese.
  3. Loosely place the foil on top, without touching the cheese layer.
  4. Bake at 375°F (190°C) covered for 60–75 minutes or until heated through the centre.

5. Bake uncovered at 425 °F (220 °C) for another 10-15 minutes or until the cheese is browned.

6. Make sure centre reaches 165°F (74°C).

7. Allow the casserole to sit and cool slightly, about 5 to 10 minutes before serving.
