How to Store Canadian Flapper Pie
Flapper Pie is best enjoyed chilled, making it a wonderful make-ahead dessert. Because it contains a homemade custard filling and meringue topping, it should always be stored in the refrigerator.

Once the pie has cooled completely, loosely cover and refrigerate. Store in the fridge for up to 3 days.
Can You Freeze Canadian Flapper Pie?
Freezing is not recommended.

It was enjoyed in homes across Manitoba, Saskatchewan, and Alberta during the early 20th century, where it was popular for being inexpensive, comforting, and made from simple ingredients most homes had on hand.
You’ll occasionally find Flapper Pie elsewhere in Canada but it’s most adored in the Canadian Prairies. Because the ingredients were inexpensive and readily available, Flapper Pie remained popular during both the Great Depression and during the war. It was an elegant dessert that could be made without costly ingredients.

A Dessert Born from Simplicity
Flapper Pie became popular during the 1920s and 1930s, when money was scarce and many Prairie families relied on affordable, shelf-stable ingredients. Fresh fruit wasn’t always available on the Prairies, especially during the long winters, so home bakers created desserts using ingredients they almost always had on hand.
Why Is It Called “Flapper Pie”?
No one knows for certain how Flapper Pie got its name but most likely from the home cooks that popularized it; the fashionable young women known as “flappers” during the Roaring Twenties.

Ingredients
Pie crust – Graham cracker crust.
Milk – I used whole milk for a rich custard.
Flour – To thicken the filling.
Cornstarch – To thicken the filling.
Salt – Flavour.
Sugar – I used white sugar.
Eggs – Eggs yolks for the custard and egg whites for the meringue.
Vanilla – Flavour.
Butter – For a rich creamy custard.
Cinnamon – (optional) Flavour and garnish.
How to make a Canadian Flapper Pie
For the Crust
- Preheat oven to 350 °F (180 °C)
- Crush 20 graham crackers or use 1 1/4 cups graham cracker crumbs.
- In a bowl, mix the graham cracker crumbs and 1/3 cups melted butter.
- Mix to coat the cookie crumbs.
- Use your fingers, a spoon, or a flat bottomed cup to press the mixture into the bottom and up the sides of a 9 in. pie plate.
- Bake in the preheated oven for 10 minutes.
- Remove from the oven and press any of the crust back down, and up the sides, to smooth out any puffed up areas, if needed.
- Allow the pie crust to cool before filling

the custard
- In a heavy bottom sauce pan, mix together 2/3 cup white sugar, 1/4 cup cornstarch, 1/4 cup flour, and 1/4 teaspoon salt.
- Gradually pour in 3 cups of whole milk.
- Whisk over medium heat until the mixture thickens and starts to simmer.
- While mixing constantly, allow the mixture to cook 2 minutes.
- In a bowl, whisk together 4 egg yolks. Set the egg whites aside.


6. While whisking the eggs yolks, gradually add in half of the hot milk mixture. (This will temper the eggs)
7. While whisking the hot milk mixture, add the tempered egg mixture back into the pot.
8. Return to the heat and whisk until the mixture just comes to a simmer.
9. Remove from the heat and mix in 1 teaspoon vanilla extract and 2 Tablespoons of butter.
10. Layer the custard into the prepared pie plate. Set aside to cool, then place in the fridge to chill.


the Meringue
- Preheat the oven to 400 °F (200 °C).
- In a large bowl, add in 4 egg whites.
- Beat with 1/4 teaspoon of cream of tartar; until you have soft peaks.
- While beating, gradually add in 3 Tablespoons of sugar.
- Beat until you have stiff peaks and there is no grainy texture from the sugar left.


6. Spread this evenly on top of the pie. Use a spoon to create little peaks.
7. Sprinkle the top with a dusting of cinnamon to garnish and a little bit of graham cracker crumbs.
8. Bake in the preheated oven for 5 minutes or until the peaks of the meringue are golden.
9. Cool and serve.


Canadian Prairie Flapper Pie

- 2/3 cup white sugar 134 g
- 1/4 cup cornstarch 30 g
- 1/4 cup all-purpose flour 37 g
- 1/4 teaspoon salt 1 g
- 3 cups whole milk 750 ml
- 4 eggs, separated
- 1 teaspoon vanilla extract 5 ml
- 2 Tablespoons butter 30 g
- (optional garnish) cinnamon, graham cracker crumbs
Instructions
- Preheat oven to 350 °F (180 °C)
