These Easy Tomato Basil Muffin Tin Frittata are one of those wonderfully simple recipes that can fit into almost any part of the day. They’re quick to prepare, naturally gluten-free, packed with eggs, fresh tomatoes, fragrant basil, and plenty of savoury flavour.

I especially love making mini frittatas in a muffin tin because they’re already perfectly portioned. You can make a batch on the weekend and have an easy breakfast ready for busy mornings, pack them into lunches, or serve them warm alongside a salad for a simple supper.

And because everything cooks together in the muffin tin, there’s very little fuss and hardly any dishes to wash. That’s my kind of breakfast!

Cook watery vegetables first

This is probably the most important tip.

Ingredients such as tomatoes, zucchini, mushrooms, and spinach contain quite a bit of water. If you add them raw, that moisture can be released into the eggs as they bake.

For the best mini frittatas, cook moisture-rich vegetables first or drain and squeeze them well.

Don’t overfill the muffin cups

Fill the cups approximately ¾ full. The egg mixture will puff as it cooks.

Whisk the eggs thoroughly

Whisking the eggs and milk or cream thoroughly gives you a more evenly textured, creamy frittata.

Season the eggs before baking

Eggs need seasoning! Make sure the egg mixture is properly seasoned before pouring it over your fillings.

Don’t overbake

Overcooked eggs become dry and rubbery.

Remove the frittatas when the centres are just set. They’ll continue cooking from residual heat after coming out of the oven.

How to Make Tomato Basil Muffin Tin Frittata

  1. Preheat oven to 350 °F (180 °C).
  2. Grease the bottoms and sides of a muffin tin with butter or cooking spray.
  3. Prepare your frittata mix-ins. Chop the sun dried tomatoes, rip the basil, and crumble the feta cheese in to little pieces. Set aside.

4. In a large glass measuring cup or other large pourable bowl, crack in 10 eggs.

5. Whisk the eggs to break up the yolks.

6. Add in 1/4 cup of 18 % cream, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.

7. Whisk this until the egg mixture is smooth and creamy.

8. Into the greased muffin tin, evenly add the mix-ins.

9. Pour the egg mixture into each muffin cup, leaving a little bit of room at the top of each one.

10. Bake in the preheated oven for 20-25 minutes, or until set.

11. Remove from the oven and allow to cool.

12. Run a knife around each frittata to release the sides. Remove and serve or pack in an airtight container for meal prep.
