How to make a strawberry pie with fresh strawberries
Crust
- To make this recipe quickly and easily you can use a store bought pie crust, graham cracker crust, Oreo cookie crust, or make my favourite homemade pie dough here.
- If using a cookie crust, skip this step. If using a traditional pie crust follow these steps for blind baking.
- Line and trim the edges of the pie dough to a 9-inch pie plate.


4. Place the dough lined pie plate in the freezer for 15 minutes.
5. Preheat the oven to 375 °F (190 °C).
6. Remove the frozen pie crust and pierce the bottom a few times with a fork.
7. Line the pie shell with parchment paper or aluminum foil.
8. Place pie weights, dried bean, or rice in the bottom to help the dough to hold it’s shape while baking.


9. Place the pie shell in the oven and bake for 15 minutes.
10. Remove from the oven and carefully remove the parchment (or foil) and weights.
11. Pierce the bottom of the shell several times again with a fork.
12. Return the pie to the oven to finish baking for another 15 minutes or until golden on the top and bottom.
13. Set aside to cool while you make the filling.


Fresh Strawberry Pie Filling
- Wash and hull 2 1/4 lbs of fresh strawberries.
- Set aside half to be mixed in fresh. Cut these in half or quarters for larger berries.
- Cut the rest of the berries and add them to a sauce pot.
- To the sauce pot, add in 1/2 cup of water.
- Mash the berries with the water to release some of the juices.


6. In a bowl mix together 1 cup of sugar, 1/3 cup of cornstarch, 1/4 teaspoon of salt.
7. Mix this into the sauce pot of berries.


8. Bring the berry mixture to a simmer over medium heat, stirring occasionally.
9. Cook and stir until the filling turns from cloudy to a gel appearance and the mixture becomes thickened.
10. Remove from the heat and stir in 1 teaspoon of lemon juice.


11. Fold in the reserved berries.
12. Spoon the strawberry filling into the prepared pie crust and allow it to cool slightly before placing it in the fridge to chill and set for at least 3 hours or overnight.

- 1 teaspoon lemon juice 5 ml
